Ingredients

  • Bread (Brown/White): 4 slices

  • Boiled Potatoes (Small): 2-3

  • Onions (Finely Chopped): 1 small

  • Green Chillies (Finely Chopped): 1 small

  • Eggs: 4

  • Salt: 1.5 tsp

  • Black Pepper (Crushed): 1/3 tsp

  • Cooking Oil: As preferred

  • Olive Oil: 1 tbsp

  • Lime: 1/2 piece

  • Tomato Ketchup: 1 tsp

  • Hot Sauce: 1/2 tsp

  • Mayonnaise: 3 tsp

  • Mushrooms (Chopped): 200 gms

  • Paprika: 1.5 tsp

  • Chickpea Flour (Besan): 1/2 cup

  • Cheese (Shredded): 3 tbsp

Process

Potato Egg Sandwich

  1. Prepare Filling:

    • Mash boiled potatoes with salt, onions, green chillies, lime juice, black pepper, and olive oil.

  2. Prepare Egg-Bread:

    • Whisk 2 eggs with salt. Dip bread slices in the mixture and fry in a pan with cooking oil.

  3. Assemble Sandwich:

    • Spread tomato ketchup on one slice and hot sauce on the other. Add mashed potato filling, close with the second slice, and cut into halves.

Mushroom Cheese Sandwich

  1. Cook Filling:

    • In a pan, fry mushrooms and 2 raw eggs with paprika and salt until almost done.
