Ingredients

  • Boiled Chana (Chickpeas) – 2 cups

  • Chopped Onions – 2 small-sized

  • Chopped Green Chillies – 2

  • Garlic Powder – 3 tsp

  • Fennel Seeds (Saunf) – 1 tsp

  • Chopped Tomatoes – 1 medium-sized

  • Salt – 1.5 tsp

  • Turmeric Powder – ½ tsp

  • Chopped Cabbage – 2 cups

  • Cooked Rice (70% to 80% cooked) – 4 to 5 cups

  • Cooking Oil – as needed

  • Chana Masala – 1.5 tbsp

  • Chopped Coriander – for garnishing

Instructions

  1. Sauté Veggies and Spices:

    • Heat oil in a frying pan or wok. Sauté onions, green chillies, and fennel seeds until onions turn slightly golden brown.

    • Add garlic powder, tomatoes, salt, and turmeric powder. Cook until tomatoes are soft and dry.

  2. Add Cabbage and Chickpeas:

    • Stir in chopped cabbage and chana masala. Fry until the cabbage is half-cooked.

  3. Prepare the Rice:

    • Cook white rice until it\’s 70%-80% done. Let it cool and set aside.

  4. Combine Rice with Veggies:

    • Mix the cooked rice into the pan with the vegetables. Stir for 3-4 minutes on medium heat.

  5. Final Touches:

    • Add chopped coriander and mix well.

  6. Serve:

    • Turn off the stove and transfer the Chickpea Fried Rice to a serving bowl.
