Paprika/Red Chilli Powder – 1 tsp

Chopped Onions – 1 medium-sized

Capsicums/Green Bell Peppers – ½ piece

Chopped Tomatoes – 1 medium-sized

Crushed Black Pepper – ½ tsp

Salt – 1 tsp

Yellow Cheddar Cheese – 1 large sheet

White Mozzarella Cheese – 1 large sheet

Pickled Jalapeño Slices – 5 to 6

Sliced Avocados – 6 slices

Instructions

Cook the Vegetables:

Fry garlic in oil. Add mushrooms, butter/ghee, spinach, salt, and paprika. Cook until the mushrooms are done.

In another pan, sauté onions, capsicum, black pepper, salt, and tomatoes for 2 minutes.

Prepare the Egg Mixture:

Whisk the eggs with salt in a bowl.

Make the Omelette:

Heat oil in a pan. Pour in the egg mixture, keeping the flame low. Sprinkle with black pepper.

On one side of the omelette, layer the cooked mushrooms, spinach, onions, capsicum, and tomatoes.

Add cheddar and mozzarella cheese, along with some chopped coriander. Fold the omelette over.
