Ingredients

  • Baingan/Brinjal (Eggplant) – 1 Big Sized, sliced

  • Maida (All-Purpose Flour) – ½ cup

  • Corn Flour – ½ cup

  • Salt – 1.5 tsp

  • Butter – 2 tsp

  • Ghee (Clarified Butter) – 1 tbsp

  • Turmeric Powder – 1 tsp

  • Red Chilli Powder – ½ tsp

  • Milk – ¼ cup

  • Tomato – 1 Big Sized, sliced

  • Onion – 1 Medium Sized, sliced

  • Green Chillies – 2 to 3

  • Cashew Nuts – ⅓ cup

  • Almonds – ¼ cup

  • Whole Spices:

    • Cumin Seeds (Jeera) – 2 tsp

    • Coriander Seeds (Dhaniya) – 2 tsp

    • Cardamom (Elachi) – 5 to 6

    • Cinnamon Sticks (Dalchini) – 3

    • Cloves (Laung) – 2 to 3

    • Bay Leaves (Tej Patta) – 2

    • Whole Black Pepper (Kali Mirch) – ⅓ tsp

  • Crushed Black Pepper – A Sprinkle

  • Red Food Colour – ¼ tsp

  • Ginger – 6 to 7 pieces

  • Garlic Cloves – 4 to 5

  • Fennel Seeds (Saunf) – 1.5 tsp

  • Sugar – ⅓ tsp

For Garnishing

  • Fried Onions – A sprinkle

  • Whipping Cream – 2 tbsp

Instructions

  1. Prepare Baingan:

    • Slice the eggplant into desired shapes.

    • In a bowl, mix maida, corn flour, salt, turmeric powder, milk, and water to make a batter.

    • Heat cooking oil in a pan, dip eggplant slices in batter, and fry until golden.

  2. Make Tomato-Onion Purée:

    • Sauté sliced tomatoes, onions, ginger, turmeric, and red chilli powder in butter.

    • Cool and blend into a fine purée.

  3. Prepare Nut Paste:

    • Grind cashew nuts, almonds, and green chillies with water into a fine paste.

  4. Prepare Spice Mixture:

    • Grind whole spices (jeera, dhaniya, kali mirch, dalchini, elachi, laung, tej patta, saunf) into a fine mixture.

  5. Cook the Curry:

    • Heat ghee in a pan, add jeera and crushed black pepper.

    • Add tomato-onion purée, spice mixture, and nut paste. Cook well.

    • Season with salt and sugar. Add water and red food colour.

    • Add fried baingan slices and simmer for 2-3 minutes on low to medium heat.

  6. Garnish and Serve:

    • Finish with whipping cream and sprinkle fried onions on top.

    • Serve hot with naan, roti, rice, or kulcha.
