This Mushroom Biryani recipe combines aromatic spices and succulent mushrooms to create a delicious, restaurant-style dish. Perfect for a hearty family meal or a special occasion, this recipe brings the rich flavors of traditional biryani with a vegetarian twist.

Ingredients

For Mushroom Majestic Masala:

  • Chopped Mushrooms – 400 gms

  • Cumin Powder – 1 tbsp

  • Salt – 4.5 tsp

  • Ginger Garlic Paste – 1 tsp

  • Turmeric Powder – 1.5 tsp

  • Milk – 1/3 cup

  • Corn Flour/Corn Starch – 1/3 cup

  • Cooking Oil – for frying

  • Finely Chopped Green Chillies – 2 tsp

  • Finely Chopped Garlic – 1 tbsp

  • Chopped Curry Leaves – 1/4 cup

  • Degi Mirch Powder – 1.5 tbsp

  • Coriander Powder – 1 tbsp

  • Curd/Yogurt – 1 cup

For Biryani Rice:

  • Long Grain Basmati Rice – 1.5 cups

  • Cumin Seeds – 1.5 tbsp

  • Cloves – 4

  • Cinnamon – 4 small pieces

  • Cardamom – 4

  • Cooking Oil – 3 tbsp

  • Water – for boiling

For Layering:

  • Biryani Masala – 2.5 tbsp

  • Yellow Food Colour – 1 tsp

  • Finely Chopped Coriander Leaves – 1/2 cup

  • Ghee – 5.5 tbsp

Instructions:

  1. Prepare Mushroom Majestic Masala:

    • In a bowl, mix chopped mushrooms with cumin powder, salt, ginger garlic paste, turmeric powder, milk, and corn flour. Set aside for 10 minutes.

    • Fry the marinated mushrooms in hot oil until brown and set aside.

    • In a separate pan, sauté green chillies, garlic, and curry leaves. Add degi mirch, coriander, and turmeric powders, followed by curd. Cook for 3-5 minutes.

    • Add the fried mushrooms to this masala and cook for another 2-3 minutes. Remove from heat.

  2. Cook the Biryani Rice:

    • Wash the rice thoroughly.

    • Boil water with cumin seeds, cloves, cardamom, cinnamon, salt, and oil. Add rice and cook until 70-80% done.

    • Drain the rice and set aside.

  3. Layer the Biryani:

    • In a biryani pot, add a layer of cooked rice. Sprinkle biryani masala, food colour, chopped coriander, and ghee.

    • Add a layer of Mushroom Majestic Masala.

    • Repeat the layers, finishing with rice on top. Garnish with coriander and ghee.

  4. Cook the Biryani:

    • Seal the pot with foil and a lid. Cook on very low heat for 25-30 minutes.

    • Remove the lid and foil.

  5. Serve:

    • Serve the Mushroom Biryani hot with raita and salan.
