Ingredients

  1. Milk – 2 cups (450 ml)

  2. Suji/Semolina – 1.5 cups

  3. Sugar/Powdered Sugar – 1.5 cups

  4. Cocoa Powder – ⅓ cup

  5. Ghee – 2 tbsp

  6. Raisins – 3 tbsp

For Garnishing

  • Chopped Almonds

  • Chopped Pistachios

Instructions

  1. Prepare the Chocolate Mixture:

    • In a bowl, combine powdered sugar, cocoa powder, and milk. Mix well.

    • Strain the mixture through a strainer to ensure smoothness.

  2. Cooking the Semolina:

    • Heat ghee in a frying pan.

    • Add suji/semolina and fry until it turns golden brown. During frying, incorporate powdered sugar and raisins for added sweetness and texture.

  3. Combining Ingredients:

    • As the suji changes color, gradually pour in the cocoa and milk mixture. Stir continuously until the mixture thickens and starts to leave the sides of the pan.

  4. Setting the Barfi:

    • Remove the pan from the stove.

    • Spread the mixture evenly in a greased tray.

    • Garnish with chopped almonds and pistachios.
