  1. Raw Mushrooms: 350 grams

  2. Tomatoes (Chopped): 3 medium

  3. Onions (Finely Chopped): 1 large

  4. Salt: 2 tsp

  5. Crushed Red Chillies/Red Chilli Powder: 1 tsp

  6. Ginger Paste: 1 tsp

  7. Garlic Paste: 1 tsp

  8. Black Pepper Powder: 1/2 tsp

  9. Garam Masala: 2 tsp

  10. Cumin (Jeera) Powder: 1 tbsp

  11. Coriander Powder: 1.5 tbsp

  12. Deghi Mirch Chilli Powder: 1 tsp

  13. Cream: 4 tbsp

  14. Ghee/Butter: 1.5 tbsp

  15. Cooking Oil: As preferred

  16. Sugar/Sugar-Free Sweetener: 1/3 tsp

  17. Tomato Ketchup: 1 tbsp

Instructions

Preparing the Ingredients

  1. Prepare Mushrooms: Peel and cut the mushrooms into desired sizes.

  2. Chop Vegetables: Finely chop tomatoes and onions.

Marinating Mushrooms

  1. Marinate: In a bowl, combine mushrooms with salt, black pepper, crushed red chillies/chilli powder, garam masala, ginger paste, garlic paste, and cream. Let it marinate for 15-20 minutes.

Cooking Process

  1. Cook Mushrooms: In a pan, heat some cooking oil. Add marinated mushrooms and a bit of ghee. Fry until nearly cooked.

  2. Make Masala: In another pan, heat oil. Fry onions, cumin powder, coriander powder, deghi mirch chilli powder, and turmeric powder until onions are golden. Add ghee and a splash of water to cook the masala.

  3. Combine Tomatoes: Add chopped tomatoes to the masala. Season with salt and a little sugar/sweetener. Stir well.

  4. Add Mushrooms: Mix in the fried mushrooms. Add tomato ketchup and water to adjust gravy consistency.

  5. Simmer: Cover and simmer on low heat for 3-4 minutes.

  6. Finish with Cream: Finally, stir in some cream for an additional 10-15 seconds.

Serving

  1. Garnish and Serve: Transfer to a serving bowl and garnish with cashew nuts.

  2. Enjoy: Serve hot with Naan, Rotis, Rice, or your favorite side dishes.
